Blurring the lines of what qualifies as “Mecha” – Here are two foes from the same universe – and to make it more interesting, let’s have Boba piloting his and Luke + R2D2 in the seat for the X-Wing.

Blurring the line? You’re ignoring the line! Just make a separate “spaceships” series.
As spaceships, Slave-1 is better than an X-wing in terms of weapons, defence, speed, maneuvering, and all those hidden gadgets Slave-1 is equipped with.
HOWEVER!
…if it’s Luke at the end of/after the films (i.e. Jedi Luke) then his Force powers would give him enough of an edge (but not an iggs*) to win.
But whatever astrotech droid Luke uses doesn’t matter, as quite frankly, R2-D2 ain’t worth “Bantha dung”.

Boba Fett’s Slave I will certainly win, assuming no Han Solo flies from nowhere and blasts Fett out of space…
This is so because of the Slave I’s manueverability. It is known for that. It also has grand shields, and high power twin lazers. It also has missiles (more than the X-Wing which I believe carries 2…). And, we cannot forget about the sonic bombs. It’d be dooms-day for Luke.
But, Luke could save his skin one way, depending on how much money he happened to have on hand…

Slave I seems to have better equipment…mines, missiles, multiple cannons….higher shield…

Statisticly, Slave-I drasticly outguns an X-wing. between the ion cannons, laser cannons, missiles, raw armor and heavier shields the X-wing can’t go head to head with a gunboat like that.
Still, the X-wing is one of the most maneuverable fighters out there and it’s proton torpedoes are known ship killers.
If it’s Luke vs Fett, then my money’s on Luke if, for no other reason than he’s an incredible pilot (not sure if X-wing Alliance is cannon, but I’ve seen him take on multiple flights of TIEs head on with nothing but good aim and sharp reflexes.
R2 is also not to be underestimated. He’s a pretty sharp robot thanks to Anikin’s tinkering and has a knack for repairs. He’s shown the ability to reprogram an X-wing’s Torpedoes and aptitude for complex planning. This is not to say that he’s going to pilot the X-wing (he can, BTW) but he can manage the energy distribution, rebalance the shields, filter out jamming, transfer energy between the shields and cannons, and repair battle damage.

Slave-1 packs faster firing cannons but terrible accuracy; X-wing is faster, probably more manouverable and clearly packs greater punch. X-Wing for win.

Obi-Wan dodged them. Luke at least equals his father in piloting skills. No offense to Boba, but a non-Force wielder (even though Boba isn’t just regular) will have a helluva time against a Force wielder in any kind of combat.

X-Wing has flares and chaff to stop incoming missiles. It also carries two torpedo launchers, with 3 torpedoes each.

Also, if Boba is on the offensive (behind Luke), Luke can fire two torps straight ahead and R2 can use HIS line of sight to guide the torps around and straight at Boba. Slave 1 does not have this advantage.
Gotta give this to the X-Wing.

The Slave I has terrible accuracy? The X-wing CLEARLY packs a greater punch? Wow… no. Just no.

Meh, granted the X-wing is faster when it comes to sub-light velocity (Slave I’s hyperdrive unit is faster than the fighter’s anyway), but the Slave I is famous for her exceptional maneuverability… plus she’s surprisingly fast for a ship of her stature. Don’t forget, Slave I’s shields are comparable to a victory I-class star destroyer’s… this thing isn’t going down very easily, even by the likes of Luke Skywalker.
And with Fett’s sophisticated jamming systems, military-grade sensor array, cloaking device, etc, I’m inclined to go with Slave I myself. If the X-wing even once gets slammed by an ion cannon blast, or if Slave I clamps the fighter with Fett’s tractor beam, the X-wing is pretty darn boned.
… Though Eric does bring up a few good points…
